Homemade Chocolate Cake

This is the fudgiest homemade chocolate cake I have ever had! It was super easy to make and very moist. I made it for my son for his birthday and he couldn’t stop talking about it. It is now a much-requested dessert in this chocolate-loving household!
A Few Tips
To make the chocolate really intense, I replaced the water in the recipe with coffee. This can be what is left in the pot or mix up some instant in the water needed for the recipe. Coffee brings out flavors in many foods such as chocolate, beef, and caramel.

Adding spices to the dry ingredients will give the chocolate cake a unique flavor all its own. I added a quarter teaspoon of cayenne to mine since I have a love for Mexican hot chocolate. It was one of those “why not?” moments and it paid off. Cinnamon, cloves, and ginger are also good choices but it is all a matter of taste.
For an autumn twist, add a teaspoon of orange extract. It reminds me of those chocolate orange balls we used to get at the vintage candy store.

I have included two recipes for frosting since some swear by the cream cheese frosting while others say don’t mess with the tried and true sugar icing. They are both good for me!

Homemade Chocolate Cake
Ingredients
- 1 ¾ cups all-purpose flour
- 1 ¾ cups sugar
- 1 cup unsweetened cocoa powder

- 2 tsp baking soda
- 1 tsp baking powder
- ½ cup olive oil
- 1 cup buttermilk or buttermilk substitute
- 2 eggs
- 1 tsp pure vanilla extract
- 1 cup water or coffee
Instructions
- Preheat oven to 350°F and grease two 9-inch cake pans with olive oil.
- Combine flour, sugar, cocoa powder, salt, baking soda, and baking powder in a medium size bowl.
- In a seperate larger bowl, beat oil, buttermilk, eggs and vanilla with an electric mixer.
- On low speed, add the dry ingredient mixture just until all is moist. Do NOT overmix!
- Add water and mix again until its all combined. Again I remind you, please do not overmix. The batter will be thin but in this recipe that is good.
- Pour the batter into the pans and bake for 25 minutes or until a toothpick poked in the middle comes out clean. Cool about 10 minutes before taking the cakes out of the pans.
Creamy Chocolate Frosting
Ingredients
- 1 ¾ stick butter softened
- ¾ cup unsweetened cocoa powder
- ⅔ cup whole milk
- 1 tsp pure vanilla extract
- 5 cups powdered sugar
Instructions
- In a medium size bowl, stir together softened butter and cocoa.
- Add milk, vanilla, and powdered sugar. Using an electric mixer, beat well until wll combined.
Chocolate Cream Cheese Buttercream Frosting
Ingredients
- 1 1/2 cups butter softened
- 8 oz cream cheese softened
- 1 1/2 cups unsweetened cocoa powder
- 3 tsp pure vanilla extract
- 7-8 cups powdered sugar
Instructions
- With an electric mixer, beat together butter and cream cheese until fluffy.
- Add cocoa powder and vanilla extract. Beat until combined.
- Beat in powdered sugar, one cup at a time. Add milk as necessary to make it spreadable. The frosting will be thick and will thicken more as it cools.
