Crock Pot Lemon & Garlic Butter Chicken

I love Crocktober! I especially love the chicken recipes I get to play with like this Crock Pot Lemon & Garlic Butter Chicken!

Chicken is so versatile. If I had to fix it every night, I think I could make each meal so different that there would be no complaints. It is great on the bone and off, shredded or whole, cut into strips or thrown on the grill. Oh, and my favorite go-to, FRIED! In this recipe, however, you won’t get the fat and calories of my dear go-to. This recipe only has 81 calories a serving! It gives you plenty of playroom as to what kind of sides you want with it. I believe tonight it will be buttery mashed potatoes for us. That with some roasted vegetables will satisfy my guys nicely. What are your favorite go-to sides?

I want to make this dish amazing for you but I also want the cleanup to be just as easy. As always, I will urge you to line your crock pot with a good Crock-Pot liner. It will keep you from having to spend time scrubbing when you just want to enjoy the evening with loved ones.

Mix your chicken broth and lemon juice together. I had used my last lemon yesterday so I opted for 3 tablespoons of Real Lemon juice. Set this aside.

In a separate bowl, blend together the Italian seasoning, onion powder, garlic powder, crushed red chili pepper flakes, salt, pepper, and paprika.

Dice your butter and chop or mince your garlic. Now the fun begins!
Work the Crock Pot Magic
Lay the chicken thighs along the bottom of the crock pot and pour the chicken broth mixture over them.
Sprinkle the spice blend you created over the thighs. You can already smell the tempting aromas!

Dabble the garlic and diced butter over the top of chicken thighs. You will want to make sure every piece of chicken gets the love.

Most of the work was in the prep, as you can see. The chicken will be bursting with flavors that you didn’t have to stand over in order to create. You have more important things to do than slave over a hot stove and Crocktober gives us plenty of ways to give our families great flavors and plenty of our time.

Ingredients
- 6-8 boneless, skinless chicken thighs
- ⅓ cup chicken broth
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp crushed red chili pepper flakes or cayenne powder
- ½ tsp black pepper
- 4 cloves garlic minced
- 1 tsp salt
- ½ stick butter diced
- juice of one lemon
Instructions
- Line your crockpot with a liner for easy clean-up. Place your chicken thighs along the bottom.
- Mix the chicken broth and lemon juice, then pour over the chicken.
- Combine Italian seasoning, onion powder, garlic powder, crushed red chili pepper flakes, salt, pepper and paprika. Sprinkle over the chicken.
- Put diced butter and minced garlic on the thighs.
- Serve whole or remove chicken and shred.
