Creamy Crock-Pot Chicken and Broccoli

What better way to start Noodle-vember than with a simple crockpot macaroni recipe? I only recently started cooking pasta in the crockpot but it is a lifesaver when I know I won’t be able to stay right with a boiling pot of water on pasta night. This creamy crockpot chicken and broccoli recipe has all the elements of a one-pot dinner. You have your protein, your pasta, and your veggies all cooking together and spreading that love around. It’s definitely Oh My Gravy Good!

The crockpot is one of my favorite kitchen gadgets. It is literally a set it and forget it appliance. You set it up, go to work and when you get home you just serve the goodies. My children all take advantage of this awesome convenience.

I’m not sure if I have mentioned it before but my children (all grown now) are pretty darn good cooks. My daughter, Terri, enjoys experimenting in the kitchen much as my mom did. Basic recipes get tweaked into Wow! Today I want to share with you a recipe she put together last week that she calls Creamy Crock Pot Chicken and Broccoli.

Through the magic of video chat, Terri and I played with this recipe not really knowing how it would turn out. We have all done that at one point or another but this time she had her camera ready so she could share this with you as well. She has got the hang of using her camera phone often since she is a blogger herself. Terri has a crafting blog called Happy Hippo Sewing and she has such a talent for teaching! She encouraged me to give you the recipes that I so enjoy making.

Work Your Crock-Pot Magic

Let’s start with the liner. Reynold’s Co. has a great crockpot liner that I use for most instances but I also use aluminum foil for things like potatoes and meats. They are both great options for a fast clean up. Use a liner of some sort to line your crockpot so you aren’t stuck scrubbing a crockpot instead of spending time with your family.

Lay your chicken at the bottom of your crockpot and season with the lemon pepper, garlic powder, and onion powder.

In a separate bowl, mix the chicken broth with the cream soups until it’s a creamy consistency.

Pour the soup mixture over the chicken. Cover and cook on low for three hours.

Add the vegetables and give it all a quick stir. Cover and cook on low another 2 hours.

Now, it’s time to take the chicken out of the crockpot and shred it. I use two forks to continuously pull it apart but you can also put it in a stand mixer with a flat beater attachment to make the job fast.

Add the shredded chicken, elbow macaroni, shredded cheese to the crockpot.

Stir to combine the ingredients and cook for 1 more hour on high. Enjoy!

Ingredients
  

  • 6-8 boneless chicken breast strips
  • 1 10 oz bag elbow macaroni
  • 1 ½ cup shredded cheese
  • 1 10.5 oz can cream of mushroom soup
  • 1 10.5 oz can cream of chicken soup
  • 1 ½ cups chicken broth
  • 1 10.8 oz bag Birds Eye Broccoli, Cauliflower and Carrots
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp lemon pepper

Instructions
 

  • Place a liner in your crockpot for easy cleanup.
  • Lay the chicken along the bottom of the crockpot and season with the lemon pepper, garlic powder, and onion powder.

  • Mix together the cream soups and the chicken broth in a separate bowl and pour over the chicken.
  • Cook on low for 3 hours.
  • Stir in the vegetable blend.

  • Cover and cook for 2 hours.
  • Remove the chicken from the crockpot and shred.

  • Cook for another hour on high. Enjoy!
